Coffee Yuan Xiao
Recipe
Ingredients:
Glutinous Rice Flour 200g
Coffee Paste 150g (see recipe below)
Water 350ml
Ginger 2 slices
Brown Sugar 40g
Coffee 10ml
Step 1:
Add the 350ml water slowly to the 200g Glutinous Rice flour to make a dough. Roll the dough into a log. Cut off small slices of dough to create balls.
Step 2:
Add 10 grams of coffee paste to center of each ball.
Step 3:
Boil 1 liter of water. Add ginger, brown sugar and coffee then add the Yuan Xiao and boil for 10 mins.
Coffee Paste Recipe
Ingredients:
125 grams bittersweet chocolate, chopped
½ cup heavy cream
30ml coffee
Step 1:
Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the coffee.
Step 2:
Allow to cool until thick them whip with a whisk until light and fluffy.
For alternative flavours replace bittersweet chocolate with white chocolate for “latte” flavor. Add vanilla or hazelnut if required.
